Allison was recently craving something healthy and sweet. She found everything she needed in her pantry except for chocolate chips. Luckily, she had dark chocolate covered espresso beans on hand which is what makes these balls a little different in the best way. They have an added kick! Full of protein, goodness and just enough sweet while packing a pop of caffeine.
Ingredients
• 1 cup rolled oats
• 1 cup peanut butter
• 1/2 cup TJ's dark chocolate covered espresso beans
• 1/2 cup ground flaxseed meal
• 1/2 cup honey
• 2 tablespoons chia seeds
• 1 tsp vanilla extract
Instructions
1. Measure out the dark chocolate covered espresso beans and pour into a sealed plastic baggie. Seal and break them up with the backside of a measuring cup, or something similar.
2. Next, combine all ingredients together in a bowl. Form into 1” balls using hands.
3. Arrange balls in a container or baking sheet. Freeze to set. Enjoy after about an hour!
